I remember when I was a teenager and I’d do some really crazy, out-of-control things.
No, not drinking. Not smoking. Not drugs. Nope, none of any of that. I was way too goody goody for that.
But when I got together regularly with my friend Andrew (yeah, the only Andrew I ever knew growing up, so of course we had to be friends), we’d step things up to 11 and spend some time… baking cookies.
Yeah, cookies.
Though to be fair, we wouldn’t make your everyday ordinary cookies. We’d roughly follow the chocolate chip cookie recipe on the back of the Nestle Chocolate Chips bag, but we never liked making things the normal way. So we’d usually pour it all into a bread pan and make a cookie loaf.
Sometimes we’d add in M&Ms. Or one time I recall adding an entire jar of Fluff! Some cookies were amazing. Many were inedible. But we always had fun.
Well, this past weekend, I’m happy to see my nephew Matthew continuing the tradition! He was super excited to make dessert for us all based on a recipe he found for Ice Cream Bread.
Not ice cream cake. Ice Cream Bread.
It’s super easy to make and using various “toppings” and different ice cream flavors, you have an infinite number of breads at your disposal.
Basically there’s just two ingredients though: ice cream and self-rising flour. That’s it. Add in sprinkles or chocolate chips if you’d like. Bake it, slice it and then eat it!
It may look like fruit cake, but trust me, it’s anything but!
To add to the decadence, I had to put some ice cream on top. Yep, I’m eating Ice Cream Bread a la Mode!
So how’s it taste?
Pretty darn amazing! It really does taste like bread (definitely a bread consistency), just a bit sweet. Not super sweet though. Having used just vanilla ice cream, sprinkles and chocolate chips (never enough if you ask me!), it was kind of like a pound cake.
I’d love to give it a shot myself using chocolate ice cream, but I’d also love to use cookies and cream and gallons of chocolate chips.

Ice Cream Bread
Ingredients:
- 2 cups melted ice cream (room temperature is good)
- 1 1/4 cup of self-rising flour
Directions:
- Preheat oven to 375 degrees and grease a loaf pan
- Let ice cream sit out at room temperature or melt a bit in microwave to soften.
- Mix melted ice cream with flour
- Add any extra “toppings” you’d like
- Pour your cake batter into pan
- Bake for 30-40 minutes
- Slice and serve with whipped cream, chocolate syrup, ice cream, cherries or any of your favorites.
Suggested Extras to Mix In:
- Colored Sprinkles
- Chocolate Chips
- Crushed Oreos
- M&Ms
- Chocolate Syrup
- Strawberry Syrup

That is pretty clever! Ice cream has basically all the stuff in it for bread/cookies/muffins, so yeah t would work!
I would likely be boring and try vanilla first but add sprinkles for color.

This is so cool! I love it, and something to do for fun with the kids, especially if they get bored on a snowy day or holiday doldrums. I don’t know what ice cream I’d use, but it would be fun to shop just for this, I’m thinking strawberry! I’d want to top it with ice cream, too!

I think I’d definitely try to do chocolate loaf as well. Your chocolate chip cookie loaf sounds intriguing as well. Definitely some “sweet” ideas here. 🙂
